Description

A delightful combination of ripe bananas, gooey chocolate, and fluffy marshmallows in muffin form, perfect for cozy mornings.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/4 cup mini marshmallows
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the mashed bananas, milk, vegetable oil, egg, and vanilla extract until well mixed.
  3. In another bowl, whisk together the flour, graham cracker crumbs, sugar, baking powder, baking soda, and salt until combined.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Don’t over-mix!
  5. Fold in the chocolate chips and mini marshmallows.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Notes

For even more flavor, try adding nuts or spices like cinnamon. Leftover muffins can be stored in an airtight container at room temperature for up to three days.
