Description

A cozy weeknight dinner featuring ground turkey, vibrant veggies, and creamy bang bang sauce served over jasmine rice.


Ingredients

  • 1 lb ground turkey
  • 2 cups cooked jasmine rice
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 cup chopped red bell pepper
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the bang bang sauce. Set aside.
  3. Heat a large skillet over medium-high heat and add the olive oil.
  4. Add the ground turkey, breaking it apart with a spoon, and cook until browned and cooked through.
  5. Add soy sauce, salt, and pepper, then stir to combine.
  6. Toss in the chopped red bell pepper, carrots, and broccoli, cooking for an additional 5-7 minutes until tender-crisp.
  7. Remove the skillet from heat and mix in half of the bang bang sauce.
  8. In individual bowls, create a mound of cooked jasmine rice and top with the turkey and vegetable mixture.
  9. Drizzle remaining bang bang sauce over each bowl, garnish with sliced green onions and sesame seeds, and serve immediately.

Notes

The bang bang sauce can be made in advance and stored in the fridge for up to a week. Leftovers can be stored in an airtight container for 3-4 days.
