A heartwarming one-pot meal of tender beef and silky noodles cooked in a rich broth, perfect for busy weeknights.
Ingredients

- 2 pounds of beef stew meat
- 1 medium onion, chopped
- 3 cups of beef broth
- 2 cups of egg noodles
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of Worcestershire sauce
- Salt and pepper to taste
- 1 cup of heavy cream
- Fresh parsley, chopped (for garnish)
Instructions
- Season the beef stew meat with salt and pepper in a large bowl.
- Add the chopped onion and minced garlic to the crock pot.
- Place the seasoned beef on top of the onions and garlic, and sprinkle with dried thyme.
- Pour the beef broth over all the ingredients.
- Cover the crock pot and cook on low for 360–480 minutes or on high for 180–240 minutes.
- Stir in the egg noodles about 30 minutes before serving.
- Stir in the heavy cream once the noodles are cooked.
- Garnish with chopped parsley before serving.
Notes
For added flavor, consider mixing in other vegetables such as diced carrots and celery. You can also use chicken instead of beef for a variation.
