Description

A creamy, cheesy twist on traditional mac and cheese using tender cauliflower for a nutritious comfort food option.


Ingredients

  • 1 head cauliflower, cut into small bite-size pieces
  • 2 Tbsp. olive oil
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. salt
  • 1 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1 1/2 cups heavy whipping cream
  • 4 ounces cream cheese, cut into small cubes
  • 1 cup shredded cheddar cheese
  • 1 cup gruyere cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 tsp. paprika (optional)

Instructions

  1. Preheat your oven to 425 degrees F. Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Place the cauliflower pieces on the prepared baking sheet. Drizzle with olive oil, salt, and pepper. Toss until well coated.
  3. Bake the cauliflower for 15-20 minutes, or until softened and lightly charred.
  4. Pour the heavy cream into a large pot over low heat and add the cream cheese. Whisk until melted.
  5. Sprinkle in the cheddar, gruyere, and Monterey Jack cheeses, stirring until smooth.
  6. Add the garlic powder, onion powder, and paprika if desired, and continue stirring until thickened.
  7. Remove from heat and whisk until silky smooth.
  8. Fold in the roasted cauliflower pieces until well coated.
  9. Serve immediately and enjoy!
