Description

A vibrant salad filled with tender pasta, sun-kissed vegetables, and a drizzle of zesty dressing, perfect for potlucks and picnics.


Ingredients

  • 12 ounces cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, diced
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup Italian dressing
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to the package instructions. Once they are tender and cooked through, drain the pasta and let it cool completely.
  2. In a large mixing bowl, combine the cooled tortellini with the cherry tomatoes, diced bell peppers, sliced black olives, diced red onion, and cubed mozzarella cheese.
  3. Pour the Italian dressing over the salad, and gently toss everything together until all the ingredients are evenly coated in the dressing.
  4. Stir in the fresh, fragrant basil, and season with salt and pepper to taste.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

This salad can be made a day in advance. Feel free to swap ingredients based on what’s in season or available.
