Ingredients

- 12 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced
- 1/2 cup black olives, sliced
- 1/4 cup red onion, diced
- 1 cup mozzarella cheese, cubed
- 1/2 cup Italian dressing
- 1 tablespoon fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to the package instructions. Once they are tender and cooked through, drain the pasta and let it cool completely.
- In a large mixing bowl, combine the cooled tortellini with the cherry tomatoes, diced bell peppers, sliced black olives, diced red onion, and cubed mozzarella cheese.
- Pour the Italian dressing over the salad, and gently toss everything together until all the ingredients are evenly coated in the dressing.
- Stir in the fresh, fragrant basil, and season with salt and pepper to taste.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
