Description

A refreshing pasta salad combining tender tortellini with fresh veggies and zesty Italian dressing, perfect for summer gatherings.


Ingredients

Scale
  • 12 ounces fresh tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, cubed
  • 1/2 cup mozzarella balls
  • 1/4 cup red onion, diced
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the tortellini according to package instructions; drain and rinse with cold water.
  2. Combine the cooked tortellini, cherry tomatoes, cucumber, black olives, salami, mozzarella, and red onion in a large bowl.
  3. Pour the Italian dressing over the top and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled, garnished with fresh basil.
