Description

A cozy and comforting skillet meal featuring tender chicken, crispy turkey bacon, and golden Yukon gold potatoes in a creamy ranch sauce.


Ingredients

  • 2 lbs chicken breasts (cubed)
  • 1 lb turkey bacon
  • 4 cups Yukon gold potatoes (cubed)
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 23 tbsp ranch seasoning
  • 2 cups cheddar cheese (shredded)

Instructions

  1. Preheat your Blackstone to medium heat, adding a thin coat of oil to avoid sticking.
  2. Add the diced Yukon gold potatoes to one side of the grill and cook for about 15 minutes before flipping.
  3. Lay the turkey bacon on the other half of the grill and cook for about 5 minutes on each side until crispy. Remove and set aside.
  4. Flip the potatoes, adding more oil if needed, and continue cooking until golden and crispy.
  5. Place the cubed chicken on the grill, cooking in the remaining bacon grease and seasoning with salt, paprika, onion powder, garlic powder, and ranch seasoning. Cook for about 6-8 minutes on each side until fully cooked.
  6. Combine the chicken and potatoes, layer on the shredded cheese and crispy turkey bacon, and cook until the cheese melts.
  7. Remove from heat and enjoy!

Notes

Make-Ahead Friendly: Prep chicken and veggies the night before. Store in the fridge and cook when ready. Customize with your favorite proteins or veggies. Leftovers can be refrigerated for up to 3 days.
