Description

A refreshing and easy bread salad that celebrates seasonal produce and is perfect for gatherings.


Ingredients

  • 4 cups crusty bread, torn into bite-sized pieces
  • 2 vine-ripened tomatoes, chopped
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • A handful of fresh basil leaves, torn
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Tear the crusty bread into bite-sized pieces and place in a large bowl.
  2. Chop the vine-ripened tomatoes, cucumber, and red onion, and add them to the bowl with the bread.
  3. Tear fresh basil leaves and add them as well.
  4. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to create a tangy vinaigrette dressing.
  5. Pour the vinaigrette over the salad and toss everything together gently, ensuring the bread absorbs the dressing.
  6. Let the salad sit for about 15-20 minutes to allow the flavors to meld before serving.

Notes

Best enjoyed fresh. Prep ingredients in advance but dress just before serving to keep the bread crunchy.
