Description

A rich and creamy Cajun potato soup that warms your soul with robust flavors and tender potatoes, perfect for cozy nights.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 ring (13.5 ounces) andouille sausage, sliced into ¼-inch rounds
  • 1 large onion, diced (about 1 cup)
  • ½ cup diced celery (about 1 rib)
  • ½ red bell pepper, seeded and diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup (119 g) heavy whipping cream
  • 1 cup (113 g) mild cheddar cheese, shredded
  • Parsley, chopped for garnish

Instructions

  1. Heat the vegetable oil over medium heat in a large pot. Add the sliced andouille sausage and sauté for about 5 minutes until golden brown.
  2. Stir in the diced onion, celery, and red bell pepper. Cook for 5–7 minutes until the vegetables are tender and the onion is translucent.
  3. Add the minced garlic, Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Stir well and cook for another 1–2 minutes.
  4. Pour in the chicken broth and add the cubed russet potatoes. Bring to a boil, then reduce heat and let simmer for about 15–20 minutes until the potatoes are fork-tender.
  5. Use a potato masher to lightly mash some of the potatoes for a creamy texture while keeping some chunks intact.
  6. Stir in the heavy whipping cream and shredded mild cheddar cheese until the cheese melts and blends into the soup.
  7. Taste and adjust seasoning. Ladle into bowls and garnish with chopped parsley.

Notes

Make ahead and store in the fridge for up to 3 days. Freeze portions in airtight containers for up to 3 months.
