Description

Golden puff pastry topped with sweet caramelized onions and creamy goat cheese, perfect for gatherings or a cozy night in.


Ingredients

  • 1 sheet of puff pastry
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and cut it into squares or circles that will fit your tart pan. Place the pastry on a baking sheet.
  2. Heat the olive oil over medium heat in a large skillet. Add the sliced onions and cook, stirring frequently, until they are caramelized—this takes about 15-20 minutes. When they reach that beautiful golden-brown color, stir in the balsamic vinegar, salt, and pepper.
  3. Assemble the tarts by scooping the caramelized onions onto the puff pastry, making sure they’re evenly distributed. Sprinkle the crumbled goat cheese over the top.
  4. Bake for about 15-20 minutes, or until the pastry is golden brown and puffed. If you’d like, garnish with fresh thyme or rosemary before serving.

Notes

You can caramelize the onions a day in advance and store them in the fridge. Just reheat before assembling the tarts. Feel free to swap in different cheeses or add extra veggies as desired.
