- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 4 ounces goat cheese, crumbled
- 1 tablespoon balsamic vinegar

Instructions
- Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and cut it into squares or circles that will fit your tart pan. Place the pastry on a baking sheet.
- Heat the olive oil over medium heat in a large skillet. Add the sliced onions and cook, stirring frequently, until they are caramelized—this takes about 15-20 minutes. When they reach that beautiful golden-brown color, stir in the balsamic vinegar, salt, and pepper.
- Assemble the tarts by scooping the caramelized onions onto the puff pastry, making sure they’re evenly distributed. Sprinkle the crumbled goat cheese over the top.
- Bake for about 15-20 minutes, or until the pastry is golden brown and puffed. If you’d like, garnish with fresh thyme or rosemary before serving.
Notes
You can caramelize the onions a day in advance and store them in the fridge. Just reheat before assembling the tarts. Feel free to swap in different cheeses or add extra veggies as desired.
