Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together 1 cup flour, 1/2 cup sugar, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt in a bowl.
- Whisk together 1/2 cup buttermilk, 1/4 cup melted butter, and 1 large egg in another bowl until creamy.
- Combine the wet and dry ingredients until just mixed; don’t overmix.
- Fold in 1 cup of chopped cherries, allowing the vibrant fruit to coat the batter.
- Mix together 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons softened butter, and 1/2 teaspoon cinnamon until crumbly for the streusel.
- Fill muffin cups about 2/3 full with batter and sprinkle the streusel on top of each one.
- Bake for 18-20 minutes or until the muffins are golden and a toothpick comes out clean.
Notes
These muffins can be made-ahead and freeze well for up to three months. Ensure your buttermilk and egg are at room temperature for a fluffy texture.
