Description

Ingredients

  • 1/4 cup melted butter

  • 1 cup fresh or frozen cherries, pitted and chopped
  • 1/4 cup brown sugar
  • 1/4 cup flour (for streusel)
  • 2 tablespoons butter, softened (for streusel)
  • 1/2 teaspoon cinnamon (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together 1 cup flour, 1/2 cup sugar, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt in a bowl.
  3. Whisk together 1/2 cup buttermilk, 1/4 cup melted butter, and 1 large egg in another bowl until creamy.
  4. Combine the wet and dry ingredients until just mixed; don’t overmix.
  5. Fold in 1 cup of chopped cherries, allowing the vibrant fruit to coat the batter.
  6. Mix together 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons softened butter, and 1/2 teaspoon cinnamon until crumbly for the streusel.
  7. Fill muffin cups about 2/3 full with batter and sprinkle the streusel on top of each one.
  8. Bake for 18-20 minutes or until the muffins are golden and a toothpick comes out clean.

Notes

These muffins can be made-ahead and freeze well for up to three months. Ensure your buttermilk and egg are at room temperature for a fluffy texture.
