Description

A comforting and flavorful meal featuring seasoned chicken, zesty salsa, and customizable toppings, perfect for family dinners or meal prep.


Ingredients

  • 2 chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving
  • Toppings: avocado, cheese, sour cream, cilantro

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add black beans, corn, salsa, cumin, chili powder, salt, and pepper on top of the chicken.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and stir to combine.
  5. Serve over cooked rice or quinoa, and top with avocado, cheese, sour cream, and cilantro.

Feel free to customize the toppings and flavors to your preference. Leftovers can be stored in the fridge for up to 4 days.
