- 2 chicken breasts
- 1 cup fresh mozzarella cheese, shredded or sliced
- 2 large tomatoes, sliced
- 1/4 cup pesto sauce
- 2 tablespoons balsamic glaze
- Salt and pepper, to taste
- Olive oil for cooking
Instructions
- Heat a drizzle of olive oil in a skillet over medium-high heat.
- Season both sides of the chicken breasts generously with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side or until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest on a plate.
- Add the sliced tomatoes to the skillet and sauté for 2-3 minutes until softened.
- Return the chicken to the skillet, topping each breast with pesto and mozzarella cheese. Cover and let it cook for another 2-3 minutes until the cheese melts.
- Drizzle balsamic glaze over the top before serving.
Notes
You can marinate the chicken in pesto ahead of time for deeper flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
