Ingredients

- 1 can chickpeas, drained and rinsed
- 2 tablespoons vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Bread of choice
- Lettuce or greens (optional)
Instructions
- Mash the chickpeas with a fork until you have a chunky mixture.
- Add the vegan mayonnaise, Dijon mustard, diced celery, diced red onion, and lemon juice.
- Mix until well combined and season with salt and pepper.
- Spread the chickpea mixture generously on your bread of choice.
- If desired, layer in some crisp lettuce or greens.
- Top with another slice of bread, cut in half, and enjoy!
Notes
Make the chickpea salad a day ahead for better flavor and texture. Store leftovers in an airtight container for up to 3 days.
