Description

Delicate cucumber sandwiches with a creamy spread, perfect for afternoon teas and gatherings.

Ingredients

Scale
  • ¾ cup cream cheese (whipped)
  • ¼ cup sour cream (or mayonnaise)
  • 2 tablespoons dill (finely chopped)
  • Kosher salt (to taste)
  • ½ English cucumber (thinly sliced)
  • 8 slices sandwich bread (crusts removed)

Instructions

  1. Combine the cream cheese, sour cream (or mayonnaise), finely chopped dill, and a pinch of kosher salt in a cozy bowl. Mix until smooth.
  2. Spread the creamy mixture generously over one side of each slice of bread.
  3. Add a layer of thinly sliced cucumber on half of the bread slices.
  4. Place the other slices of bread on top, spread side down, and gently press them together.
  5. Trim off the crusts using a serrated knife and cut each sandwich into rectangles or triangles.
  6. Arrange the sandwiches on a serving dish and garnish with extra dill or a slice of cucumber.

Notes

Make-Ahead: The creamy filling can be made a day in advance. Store in an airtight container in the refrigerator.
