Description

Ingredients

  • 1 1/4 Cups all-purpose flour
  • 1/2 Cup room temperature butter (1 stick)
  • 1/2 Cup white sugar
  • 1/2 Cup brown sugar
  • 1 Cup sweetened coconut flakes
  • 1 Cup Old Fashioned oats
  • 1 Egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F, filling your kitchen with anticipation.
  2. Cream together the room temperature butter, white sugar, and brown sugar until fluffy and light.
  3. Add in the vanilla extract and the egg, stirring until well combined.
  4. Sift in the salt, flour, baking powder, and baking soda, gently mixing until just blended.
  5. Fold in the oats and coconut flakes by hand, as the dough will be crumbly and thick.
  6. Scoop out 1 1/2 tablespoons of dough, forming little balls, and placing them on a greased baking sheet.
  7. Bake for 15 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool for 3 minutes before serving them warm.
