- 1/2 Cup room temperature butter (1 stick)

- 1/2 Cup brown sugar
- 1 Cup sweetened coconut flakes
- 1 Cup Old Fashioned oats
- 1 Egg
- 1/2 teaspoon vanilla extract
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Instructions
- Preheat your oven to 350°F, filling your kitchen with anticipation.
- Cream together the room temperature butter, white sugar, and brown sugar until fluffy and light.
- Add in the vanilla extract and the egg, stirring until well combined.
- Sift in the salt, flour, baking powder, and baking soda, gently mixing until just blended.
- Fold in the oats and coconut flakes by hand, as the dough will be crumbly and thick.
- Scoop out 1 1/2 tablespoons of dough, forming little balls, and placing them on a greased baking sheet.
- Bake for 15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool for 3 minutes before serving them warm.
