Description

A delightful and cozy coffee cake muffin, perfect for breakfast or a sweet treat at any time of day.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix together the flour, baking powder, salt, and cinnamon in another bowl.
  5. Gradually add the dry mixture to the butter and sugar mixture, alternating with the milk.
  6. Combine the brown sugar, cinnamon, and nuts for the streusel topping.
  7. Fill each muffin cup halfway with batter, add a spoonful of streusel, and top with more batter.
  8. Swirl through the batter using a toothpick for a marbled effect.
  9. Sprinkle the tops with the remaining streusel.
  10. Bake for 18-20 minutes or until a toothpick comes out clean.
  11. Cool slightly before serving.
