Description

A comforting Irish dish made with creamy mashed potatoes, tender cabbage, and crispy turkey bacon, perfect for any family gathering.


Ingredients

  • 4 large potatoes, peeled and diced
  • 4 tablespoons butter
  • 1 cup chopped cabbage
  • 4 strips turkey bacon, chopped
  • 1 leek, chopped
  • 3 scallions, chopped
  • Salt and pepper to taste
  • Milk (optional, for creaminess)

Instructions

  1. Begin by boiling the diced potatoes in a large pot of salted water until they’re tender. Once cooked, drain the potatoes and return them to the pot to keep warm.
  2. In a skillet over medium heat, cook the chopped turkey bacon until it’s crispy, then remove it from the skillet and set aside.
  3. Add the chopped cabbage and leeks to the same skillet. Sauté them until soft.
  4. Now, it’s time to bring it all together! Add the sautéed vegetables and crispy turkey bacon to the warm potatoes.
  5. Mash the potatoes until they reach your desired creaminess, then mix in the butter, scallions, and season with salt and pepper. Optionally, add a splash of milk for extra creaminess.
  6. Serve your delicious Colcannon warm as a delightful side dish.
