- 4 large potatoes, peeled and diced
- 4 tablespoons butter
- 1 cup chopped cabbage
- 4 strips turkey bacon, chopped
- 1 leek, chopped
- 3 scallions, chopped
- Salt and pepper to taste
- Milk (optional, for creaminess)
Instructions
- Begin by boiling the diced potatoes in a large pot of salted water until they’re tender. Once cooked, drain the potatoes and return them to the pot to keep warm.
- In a skillet over medium heat, cook the chopped turkey bacon until it’s crispy, then remove it from the skillet and set aside.
- Add the chopped cabbage and leeks to the same skillet. Sauté them until soft.
- Now, it’s time to bring it all together! Add the sautéed vegetables and crispy turkey bacon to the warm potatoes.
- Mash the potatoes until they reach your desired creaminess, then mix in the butter, scallions, and season with salt and pepper. Optionally, add a splash of milk for extra creaminess.
- Serve your delicious Colcannon warm as a delightful side dish.
