- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, whisk together the eggs until frothy.
- Stir in the cottage cheese to create a creamy base.
- Gently mix in the chopped veggies and seasonings.
- Fold in the shredded cheese.
- Pour the mixture into a greased 9×9 inch baking dish.
- Bake for 40-45 minutes or until the center is set and the top is golden.
