Description

Ingredients

  • 6 large eggs
  • 2 cups cottage cheese
  • 1 cup shredded cheese
  • 1 cup chopped spinach
  • 1/2 cup bell pepper, chopped
  • 1/2 cup onion, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, whisk together the eggs until frothy.
  3. Stir in the cottage cheese to create a creamy base.
  4. Gently mix in the chopped veggies and seasonings.
  5. Fold in the shredded cheese.
  6. Pour the mixture into a greased 9×9 inch baking dish.
  7. Bake for 40-45 minutes or until the center is set and the top is golden.
