Description

A crunchy and creamy salad featuring cabbage, bell peppers, and Fritos, perfect for weeknight dinners and BBQs.


Ingredients

  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup diced bell peppers
  • 1 cup Fritos corn chips
  • 1/2 cup mayonnaise
  • 2 tablespoons chipotle sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, diced bell peppers, and Fritos. Stir gently to mix.
  2. In a separate bowl, whisk together the mayonnaise, chipotle sauce, apple cider vinegar, salt, and pepper until well blended.
  3. Pour the dressing over the cabbage mixture and toss everything together until well coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Once chilled, give it a toss and serve cold.

Notes

Add fresh lime juice for a citrusy twist or jalapeños for extra heat. This salad can be made a day in advance; just add Fritos before serving.
