- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 can coconut milk (400ml)
- 2 cups vegetable broth
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper, to taste
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water until the water runs clear.
- In a large pot, sauté the chopped onion, garlic, and ginger in a splash of vegetable broth over medium heat until the onions are translucent.
- Add the turmeric, cumin, and coriander, cooking for another minute until fragrant.
- Stir in the rinsed lentils, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
