- 9 ounces cheese tortellini
- 1 tablespoon olive oil
- 1 pound shrimp, peeled and deveined
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the cheese tortellini according to package instructions; drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Add the garlic to the same skillet and sauté for about 1 minute until fragrant. Add the spinach and cook until wilted, stirring gently.
- Stir in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until melted and the sauce thickens slightly.
- Return the shrimp to the skillet and add the cooked tortellini. Toss to combine and coat the pasta in the sauce.
- Season with salt, pepper, and red pepper flakes if desired. Serve warm, garnished with extra Parmesan if you like.
Notes
For best results, prepare the sauce ahead of time and combine with tortellini and shrimp just before serving.
