- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 cup chicken broth
- 1 cup cream or sour cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Place the chicken breasts at the bottom of a crockpot.
- Add the white beans, diced tomatoes with green chilies, chicken broth, diced onion, minced garlic, cumin, chili powder, salt, and pepper.
- Stir everything to combine well.
- Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken and shred it using two forks, then return the shredded chicken to the crockpot.
- Stir in the cream or sour cream until everything is creamy and well combined.
- Serve hot, garnished with fresh cilantro.
