Description

A heartwarming creamy white chicken chili that embodies the cozy spirit of fall, perfect for any occasion.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup cream or sour cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place the chicken breasts at the bottom of a crockpot.
  2. Add the white beans, diced tomatoes with green chilies, chicken broth, diced onion, minced garlic, cumin, chili powder, salt, and pepper.
  3. Stir everything to combine well.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Remove the chicken and shred it using two forks, then return the shredded chicken to the crockpot.
  6. Stir in the cream or sour cream until everything is creamy and well combined.
  7. Serve hot, garnished with fresh cilantro.
