Description

These Easy Cucumber Salad Sandwiches are a refreshing and nostalgic treat, perfect for any occasion. Enjoy the creamy spread and crisp cucumbers nestled between soft bread.

Ingredients

Scale
  • 1 large cucumber, thinly sliced
  • 8 ounces cream cheese, softened
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices of soft bread (white, whole wheat, or your favorite kind)
  • Optional: extra dill or radish slices for garnish

Instructions

  1. Combine the softened cream cheese and Greek yogurt in a mixing bowl. Stir until smooth and creamy.
  2. Add the chopped dill, garlic powder, salt, and pepper. Mix well to ensure all flavors are blended.
  3. Lay out your slices of bread on a clean workspace. If desired, cut the crusts off for a more delicate look!
  4. Spread the creamy mixture generously on one side of each slice of bread.
  5. Layer the thin cucumber slices over half of the bread slices, ensuring they are evenly distributed.
  6. Top with the remaining slices of bread, cream cheese side down, and gently press down to adhere.
  7. If you’d like, cut the sandwiches into quarters or triangles for easy serving. Garnish with extra dill or radish slices for a zesty touch!
  8. Serve immediately, or refrigerate for an hour to enhance the flavors.

Notes

For best results, make the cream cheese mixture a day in advance!
