Ingredients

  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Prep the ingredients: Toss the chicken, potatoes, and carrots into the slow cooker.
  2. Mix the garlic butter sauce: In a bowl, combine the melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Pour the garlic butter mixture over everything in the slow cooker. Stir gently to ensure every piece is coated.
