Description

A cozy dish of tender chicken wrapped in a buttery garlic sauce with hearty potatoes and sweet carrots, perfect for busy weeknights.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Toss chicken, potatoes, and carrots into the slow cooker.
  2. In a bowl, combine the melted butter, minced garlic, Italian seasoning, salt, black pepper, and chicken broth, stirring until well blended.
  3. Pour the garlic butter mixture over the chicken and veggies, stirring gently to coat.
  4. Cover the slow cooker and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Once cooked, garnish with freshly chopped parsley, then serve the meal warm.

Notes

Feel free to swap the Italian seasoning for fresh herbs, or add cream cheese for a richer flavor.
