A warm, buttery dish featuring sautéed green beans and mushrooms, infused with garlic and lemon for a delightful side dish.

- 1 pound fresh green beans, trimmed
- 8 ounces mushrooms, sliced
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Trim the ends off the green beans and rinse them thoroughly under cold water. Set aside.
- Heat a large skillet over medium heat and add the olive oil and 2 tablespoons of butter. Allow the butter to melt and sizzle slightly.
- Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant.
- Toss in the sliced mushrooms and cook for 4-5 minutes, stirring occasionally.
- Add the green beans, sprinkle with salt and pepper, and stir to combine.
- Cover the skillet and let the green beans cook for about 5-7 minutes, stirring occasionally.
- Remove the lid and add the remaining tablespoon of butter. Stir until it melts and coats the vegetables.
- Add the lemon juice and stir well to combine.
- Transfer the green beans and mushrooms to a serving dish and garnish with fresh parsley if desired.
Notes
Make-Ahead: Prepare the green beans and mushrooms a day in advance. Store in an airtight container in the fridge.
