A cozy family favorite featuring tender chicken, creamy mashed potatoes, and sweet glazed carrots.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 2 tablespoons honey
  • 1 tablespoon butter for carrots
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). In a small bowl, mix the olive oil, garlic, thyme, rosemary, salt, and pepper. Rub this fragrant mixture all over the chicken breasts and place them in a baking dish.
  2. Bake the chicken in your preheated oven for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C). You’ll love how golden and juicy they become!
  3. While the chicken is baking, bring a pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15 minutes. Once they are nice and soft, drain and return them to the pot.
  4. Add the milk and butter to the potatoes, and mash until smooth and creamy. Season with salt and pepper to taste. Prepare for comfort with every velvety bite!
  5. In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced carrots and sauté for about 5 minutes. Drizzle honey over the carrots, stirring to coat them evenly. Cook until they are tender and beautifully glazed.
  6. To serve, plate the baked chicken alongside your creamy mashed potatoes and glossy glazed carrots. Garnish with fresh parsley for a pop of color and freshness.

Notes

You can marinate the chicken the night before to amplify flavors. Store leftovers in an airtight container for up to 3 days.
