- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, sliced
- 2 tablespoons honey
- 1 tablespoon butter for carrots
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). In a small bowl, mix the olive oil, garlic, thyme, rosemary, salt, and pepper. Rub this fragrant mixture all over the chicken breasts and place them in a baking dish.
- Bake the chicken in your preheated oven for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C). You’ll love how golden and juicy they become!
- While the chicken is baking, bring a pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15 minutes. Once they are nice and soft, drain and return them to the pot.
- Add the milk and butter to the potatoes, and mash until smooth and creamy. Season with salt and pepper to taste. Prepare for comfort with every velvety bite!
- In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced carrots and sauté for about 5 minutes. Drizzle honey over the carrots, stirring to coat them evenly. Cook until they are tender and beautifully glazed.
- To serve, plate the baked chicken alongside your creamy mashed potatoes and glossy glazed carrots. Garnish with fresh parsley for a pop of color and freshness.
Notes
You can marinate the chicken the night before to amplify flavors. Store leftovers in an airtight container for up to 3 days.
