Description

Gather around the grill with these flavor-packed Greek Chicken Kabobs, perfect for summer gatherings and easy weeknight dinners.

Ingredients

Scale
  • 1 lb boneless chicken breasts, cut into bite-sized pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 medium zucchini, sliced
  • Skewers (wooden or metal)

Instructions

  1. Whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create a marinade.
  2. Cut the chicken into bite-sized pieces and add them to the marinade, ensuring each piece is well-coated. Marinate for at least 30 minutes or up to 4 hours.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken pieces, bell peppers, red onion, and zucchini onto skewers.
  5. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through.
  6. Serve on a platter with fresh herbs or tzatziki sauce.

Notes

Marinating the chicken overnight enhances flavor. Wooden skewers should be soaked in water for 30 minutes before grilling to prevent burning.
