Description

Juicy chicken breasts marinated in a sweet and tangy glaze, complemented by grilled pineapple for a delightful tropical meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Pineapple slices for grilling
  • Chopped green onions for garnish

Instructions

  1. Combine the pineapple juice, soy sauce, brown sugar, garlic, and ginger in a bowl to create a marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, and let it rest in the refrigerator for at least 60 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard it.
  5. Season the chicken with salt and pepper.
  6. Grill the chicken for 6-7 minutes per side, until the internal temperature reaches 165°F.
  7. Add the pineapple slices to the grill in the final few minutes to caramelize.
  8. Garnish with chopped green onions and serve with rice or salad.

Notes

For extra flavor, marinate the chicken overnight. Store leftovers in an airtight container in the fridge for up to 3 days.
