Description

A refreshing and vibrant Italian Grinder Tortellini Salad, perfect for summer gatherings and busy weeknights.


Ingredients

  • 8 oz tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup salami, diced
  • 1/2 cup provolone cheese, diced
  • 1/2 cup olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, salami, provolone cheese, olives, and basil.
  3. In a separate bowl, whisk together the red wine vinegar, olive oil, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or refrigerate for an hour to let the flavors meld.
