Description

A healthier twist on the classic chocolate chip cookie, bringing comfort and nostalgia with wholesome ingredients.

Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup coconut sugar
  • 1/4 cup almond butter (or peanut butter)
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup dark chocolate chips (preferably dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Mix the almond flour, rolled oats, coconut sugar, baking soda, and sea salt in a mixing bowl.
  3. Whisk together the almond butter, pure maple syrup, and vanilla extract in another bowl until smooth.
  4. Gradually add the dry mixture to the wet mixture, stirring until well combined.
  5. Fold in the dark chocolate chips, distributing them evenly through the dough.
  6. Form small balls of dough and place them on the prepared baking sheet, leaving space in between.
  7. Bake for 10-12 minutes or until the edges are golden and the center is slightly soft.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

You can customize with different mix-ins like nuts or coconut, and dough can be stored in the fridge for up to 3 days.
