- ⅓ teaspoon Xanthan Gum
- 2 tablespoons Butter
- 1 tablespoon Low Carb Sugar Substitute (granulated)
- ¼ teaspoon Salt
- 1 Egg
- ½ teaspoon Vanilla Extract
- 1 teaspoon Baking Powder
- ⅓ cup Low Carb Sugar Substitute (powdered, for glaze)
- ½ teaspoon Heavy Cream (for glaze)
- ⅓ teaspoon Vanilla Extract (for glaze)
- 1 tablespoon Water (if needed for glaze)
Instructions
- Preheat the oven to 390°F (200°C) and line a baking pan with baking paper.
- Combine almond flour, xanthan gum, salt, erythritol, and baking powder in a mixing bowl.
- Melt the butter over low heat, then add the vanilla extract, folding it into the flour mixture.
- Stir constantly until a dough is formed that holds its shape.
- Transfer the dough to a bowl and let it reach room temperature.
- Add the egg and mix with an electric mixer until it becomes elastic.
- Cover the dough and let it rest for 15-20 minutes.
- Shape the rested dough into small balls and place them onto the prepared baking pan.
- Bake for 10 minutes at 390°F, then lower the temperature to 355°F and bake for another 5-10 minutes until golden brown.
- For the glaze, sift the powdered erythritol to remove lumps, then add heavy cream, vanilla extract, and enough water to achieve the desired consistency.
- Roll the donut balls in the glaze while they are still warm, and serve them fresh out of the oven.
Notes
Can be made ahead and stored in an airtight container for up to 3 days. Reheat in the oven before serving for best results.
