- 9 lasagna noodles
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1 cup lemon curd
- Zest of 1 lemon
- Mint leaves for garnish (optional)
Instructions
- Start by cooking the lasagna noodles according to the package instructions. Once cooked, drain and let them cool.
- In a large mixing bowl, beat together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- In a baking dish, layer 3 lasagna noodles at the bottom. Spread a layer of the mascarpone mixture on top, followed by lemon curd and a handful of fresh blueberries.
- Repeat the layers two more times, assembling noodles, mascarpone, lemon curd, and blueberries.
- Once finished, top with a layer of mascarpone mixture and garnish with lemon zest and mint leaves if desired.
- Cover and refrigerate for at least 4 hours, ideally overnight.
Notes
For best results, prepare a day in advance to enhance flavor. Use warm water on your knife for cleaner cuts.
