Description

A creamy no-bake dessert that combines zesty lemon with juicy blueberries for a refreshing treat.


Ingredients

  • 9 lasagna noodles
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 cup lemon curd
  • Zest of 1 lemon
  • Mint leaves for garnish (optional)

Instructions

  1. Start by cooking the lasagna noodles according to the package instructions. Once cooked, drain and let them cool.
  2. In a large mixing bowl, beat together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
  3. In a baking dish, layer 3 lasagna noodles at the bottom. Spread a layer of the mascarpone mixture on top, followed by lemon curd and a handful of fresh blueberries.
  4. Repeat the layers two more times, assembling noodles, mascarpone, lemon curd, and blueberries.
  5. Once finished, top with a layer of mascarpone mixture and garnish with lemon zest and mint leaves if desired.
  6. Cover and refrigerate for at least 4 hours, ideally overnight.

Notes

For best results, prepare a day in advance to enhance flavor. Use warm water on your knife for cleaner cuts.
