Description

A refreshing and vibrant sandwich filled with creamy avocado, crisp cucumber, and fresh greens, perfect for a light meal.


Ingredients

Scale
  • 2 slices of bread (whole grain, sourdough, or rye)
  • 1 ripe avocado
  • 1 medium cucumber, thinly sliced
  • 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
  • 1/4 cup cherry tomatoes, halved (optional)
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1 tsp olive oil or favorite sandwich spread (optional)

Instructions

  1. Toast the bread slices lightly if desired.
  2. Mash the avocado with lemon juice, salt, and pepper in a bowl.
  3. Spread the mashed avocado evenly over one side of each bread slice.
  4. Layer cucumber slices on top of the avocado spread.
  5. Add fresh leafy greens, sliced red onions, and cherry tomatoes if using.
  6. Sprinkle fresh herbs on top.
  7. Drizzle olive oil or your favorite sandwich spread if desired.
  8. Close the sandwich with the other bread slice and press gently.
  9. Cut in half and serve immediately.

Notes

Store leftover sandwiches tightly wrapped for a quick grab-and-go lunch. For optimal freshness, assemble just before serving.
