Description
A bright and refreshing slaw with the burst of tropical flavor from ripe mangoes combined with crunchy cabbage and zesty lime.
Ingredients

- 2 ripe mangoes, diced
- 2 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 red bell pepper, thinly sliced
- 1 carrot, grated
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced mangoes, shredded green and red cabbage, red bell pepper, grated carrot, red onion, and chopped cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.
- Pour the dressing over the slaw mixture and gently toss to coat all the ingredients evenly.
- Chill the slaw in the refrigerator or serve it at room temperature.
Notes
This slaw can be made a few hours in advance for best flavor. Store leftovers in an airtight container in the fridge for up to 2-3 days.
