Description

A bright and refreshing slaw with the burst of tropical flavor from ripe mangoes combined with crunchy cabbage and zesty lime.


Ingredients

Scale
  • 2 ripe mangoes, diced
  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 red bell pepper, thinly sliced
  • 1 carrot, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced mangoes, shredded green and red cabbage, red bell pepper, grated carrot, red onion, and chopped cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.
  3. Pour the dressing over the slaw mixture and gently toss to coat all the ingredients evenly.
  4. Chill the slaw in the refrigerator or serve it at room temperature.

Notes

This slaw can be made a few hours in advance for best flavor. Store leftovers in an airtight container in the fridge for up to 2-3 days.
