Description

A cozy Mediterranean-inspired breakfast sandwich with scrambled eggs, feta cheese, fresh spinach, and tomatoes, nestled between whole grain bread.


Ingredients

  • 2 eggs
  • 1/4 cup feta cheese, crumbled
  • 1 tomato, sliced
  • 1 cup fresh spinach
  • 2 slices whole grain bread
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add a little olive oil.
  2. Whisk the eggs in a bowl and season with salt and pepper.
  3. Pour the eggs into the skillet and scramble until fully cooked.
  4. Toast the bread slices in the same skillet until golden brown.
  5. Layer the spinach, scrambled eggs, tomatoes, and feta cheese on one slice of toasted bread.
  6. Top with the other slice of bread, cut in half, and serve immediately.

Notes

Try adding avocado slices or turkey bacon for a twist. This sandwich can be made ahead and stored for quick breakfasts.
