- 1/4 cup feta cheese, crumbled
- 1 tomato, sliced
- 1 cup fresh spinach
- 2 slices whole grain bread
- Olive oil
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and add a little olive oil.
- Whisk the eggs in a bowl and season with salt and pepper.
- Pour the eggs into the skillet and scramble until fully cooked.
- Toast the bread slices in the same skillet until golden brown.
- Layer the spinach, scrambled eggs, tomatoes, and feta cheese on one slice of toasted bread.
- Top with the other slice of bread, cut in half, and serve immediately.
Notes
Try adding avocado slices or turkey bacon for a twist. This sandwich can be made ahead and stored for quick breakfasts.
