Description

A tender and savory Mediterranean Chicken Dish that evokes memories of joyful family gatherings, flavored with lemon, garlic, and fresh herbs.


Ingredients

  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • Juice & zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt & pepper to taste
  • 1 can artichoke hearts, quartered
  • 1/2 cup green olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken breasts by mixing lemon juice, zest, olive oil, minced garlic, oregano, thyme, salt, and pepper in a bowl. Add chicken and coat well, then let marinate for 30 minutes.
  2. Preheat the oven to 375°F (190°C). Sear the marinated chicken in a large oven-safe skillet over medium-high heat for 4–5 minutes on each side until golden brown.
  3. Add artichoke hearts, olives, and cherry tomatoes to the skillet, arranging them around the chicken.
  4. Transfer the skillet to the oven and bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F.
  5. Remove from the oven, garnish with freshly chopped parsley, and serve warm.

Notes

Marinating the chicken overnight enhances the flavor. Leftovers can be stored in an airtight container in the fridge for up to three days.
