- 4 boneless chicken breasts
- 2 tbsp olive oil
- Juice & zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp oregano
- 1 tsp thyme
- Salt & pepper (to taste)
- 1 can artichoke hearts, quartered
- 1/2 cup green olives, sliced
- 1/2 cup cherry tomatoes, halved
- Fresh parsley (for garnish)
Instructions
- In a large bowl, whisk together the olive oil, lemon juice and zest, minced garlic, oregano, thyme, salt, and pepper.
- Add the chicken breasts into the marinade and let them marinate for at least 30 minutes in the refrigerator.
- Preheat your oven to 375°F (190°C).
- Heat a large skillet over medium-high heat and sear the marinated chicken for 4–5 minutes on each side until they have a golden crust.
- Transfer the chicken to an oven-safe dish, adding the quartered artichokes, sliced olives, and halved cherry tomatoes around them.
- Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through and tender.
- Remove from the oven and garnish with freshly chopped parsley before serving warm.
Notes
For extra flavor, you can add crumbled feta cheese before baking or experiment with different vegetables like bell peppers or zucchini.
