- 1 lb sirloin steak (about 1-inch thick)
- 3 tbsp olive oil
- 2 garlic cloves (minced)
- 1 tbsp lemon juice (fresh)
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt

- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional for paleo or keto)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- Salt & pepper (to taste)

Instructions
- Mix the marinade ingredients—3 tbsp olive oil, minced garlic, fresh lemon juice, dried oregano, dried thyme, salt, and black pepper—in a bowl. Coat the sirloin steak with the marinade and let it rest for at least 30 minutes, or up to 4 hours if you have time to spare.
- While the steak marinates, let’s whip up the tzatziki! Combine Greek yogurt, grated cucumber (squeezed dry), fresh lemon juice, minced garlic, fresh dill, salt, and pepper in a bowl. Chill this in the fridge while the steak infuses with flavor.
- Prepare the vinaigrette by whisking together 3 tbsp olive oil, 2 tbsp fresh lemon juice, a drizzle of honey (if using), minced garlic, dried oregano, salt, and pepper in a separate bowl.
- Heat a skillet over medium-high heat and sear the marinated steak for about 4–5 minutes on each side to achieve a beautiful crust and a tender, juicy interior. Allow the steak to rest for a few minutes, then slice it thinly against the grain.
- Now for the fun part! Begin layering—start with your grains at the bottom of the bowl, add a generous portion of sliced steak, and top it off with cherry tomatoes, diced cucumber, thinly sliced red onion, kalamata olives, and a sprinkle of feta cheese (if using). Don’t forget that creamy tzatziki and zesty vinaigrette drizzled on top.
Notes
The longer the steak marinates, the richer the flavors become. Prepare grains and tzatziki in advance for a quick meal.
