Description

A cozy and fragrant Mediterranean Yellow Rice recipe featuring fluffy basmati rice kissed by turmeric and complemented by toasted pine nuts.


Ingredients

  • 2 Tbsp. olive oil
  • ½ sweet onion (finely diced)
  • 3 cloves garlic (finely minced)
  • ¾ tsp. turmeric
  • ¼ tsp. cumin
  • ¼ tsp. paprika
  • 1 ¼ tsp. salt (to taste)
  • 2 ¼ cups water
  • 1 ½ cups basmati rice (rinsed)
  • 2 Tbsp. cilantro (finely chopped)
  • 2 Tbsp. parsley (flat-leaf, finely chopped)
  • ¼ cup pine nuts (toasted)

Instructions

  1. In a medium-sized pot over medium heat, add the olive oil and finely diced sweet onion. Sauté for 2-3 minutes, or until the onion becomes translucent.
  2. Add the minced garlic to the pot, stirring for another minute until fragrant.
  3. Mix in the turmeric, cumin, paprika, and salt, toasting them until fragrant for about 1 minute.
  4. Pour in the water and add the rinsed basmati rice, stirring to combine.
  5. Bring the water to a boil, then cover the pot and reduce the heat to low. Let the rice simmer for about 20 minutes.
  6. Remove the pot from heat and gently fold in the chopped cilantro, parsley, and toasted pine nuts. Serve immediately.

Notes

This recipe can be prepared in advance and stored in an airtight container. Leftovers can be refrigerated for up to 4 days.
