- 1 cup basmati rice
- 1 medium onion, chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 2 cups vegetable broth
- Salt to taste
- 2 tablespoons olive oil
- 1/4 cup toasted pine nuts
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in turmeric and cumin, cooking until fragrant.
- Add the basmati rice, stirring to coat the grains.
- Pour in vegetable broth and add salt to taste, stirring until well combined.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
- Remove from heat and let sit covered for 5 minutes.
- Fluff rice with a fork and stir in toasted pine nuts before serving.
Notes
For added brightness, squeeze fresh lemon juice before serving. Customize with vegetables or herbs as desired.
