Description

A comforting and flavorful Mediterranean dish featuring basmati rice infused with turmeric and cumin, topped with crunchy pine nuts.


Ingredients

  • 1 cup basmati rice
  • 1 medium onion, chopped
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 2 cups vegetable broth
  • Salt to taste
  • 2 tablespoons olive oil
  • 1/4 cup toasted pine nuts

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in turmeric and cumin, cooking until fragrant.
  4. Add the basmati rice, stirring to coat the grains.
  5. Pour in vegetable broth and add salt to taste, stirring until well combined.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
  7. Remove from heat and let sit covered for 5 minutes.
  8. Fluff rice with a fork and stir in toasted pine nuts before serving.

Notes

For added brightness, squeeze fresh lemon juice before serving. Customize with vegetables or herbs as desired.
