- 1 lb Brussels sprouts
- 2 tbsp olive oil
- Juice of 1 fresh lime
- 1/4 cup cotija cheese (or a dairy-free alternative)
- 2 tsp chili-lime seasoning
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Clean and halve the Brussels sprouts.
- Toss them with olive oil, salt, and black pepper in a large bowl.
- Spread the sprouts in a single layer on a baking sheet.
- Roast in the oven for about 25-30 minutes, or until golden and crispy.
- Remove from the oven and squeeze fresh lime juice over the sprouts.
- Sprinkle with cotija cheese and chili-lime seasoning.
- Serve warm and enjoy!

For a vegan option, substitute cotija cheese with your favorite plant-based cheese.
