Description

A delightful twist on classic Mexican street corn, these Brussels sprouts are roasted to perfection with bold flavors.


Ingredients

  • 1 lb Brussels sprouts
  • 2 tbsp olive oil
  • Juice of 1 fresh lime
  • 1/4 cup cotija cheese (or a dairy-free alternative)
  • 2 tsp chili-lime seasoning
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Clean and halve the Brussels sprouts.
  3. Toss them with olive oil, salt, and black pepper in a large bowl.
  4. Spread the sprouts in a single layer on a baking sheet.
  5. Roast in the oven for about 25-30 minutes, or until golden and crispy.
  6. Remove from the oven and squeeze fresh lime juice over the sprouts.
  7. Sprinkle with cotija cheese and chili-lime seasoning.
  8. Serve warm and enjoy!

Notes

For a vegan option, substitute cotija cheese with your favorite plant-based cheese.
