Description

Delightful mini cheesecakes with a creamy filling and a crisp graham cracker crust, perfect for any gathering.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl until well mixed.
  3. Press the mixture into the bottom of muffin pan liners to form the crusts.
  4. Beat the cream cheese until smooth in a large mixing bowl. Add 1/2 cup sugar and vanilla, mixing until combined.
  5. Add eggs one at a time, beating well after each addition.
  6. Pour the cream cheese mixture over the crust in each muffin liner, filling them about 3/4 full.
  7. Bake for 18-20 minutes, or until the edges are set and the centers slightly jiggle.
  8. Cool completely, then refrigerate for at least 2 hours before adding desired toppings.
