Description

A quick and easy one-pan dish featuring kielbasa, honey, garlic, and colorful veggies, perfect for busy weeknights.


Ingredients

Scale
  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the sliced kielbasa, honey, minced garlic, and soy sauce in a large mixing bowl.
  3. Wash and chop your bell peppers into bite-sized pieces and halve the baby potatoes.
  4. Spread the prepared veggies on a large baking sheet, tossing with olive oil, salt, and pepper.
  5. Add the kielbasa mixture on top and gently toss to coat.
  6. Pop it into the oven and bake for 25-30 minutes.
  7. Sprinkle with fresh parsley or green onions before serving.

Notes

For variations, try adding lemon juice or different vegetables to customize the dish. Leftovers can be kept in an airtight container for 3-4 days.
