Ingredients

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the creamy peanut butter, brown sugar, and granulated sugar in a mixing bowl. Mix until well combined and smooth.
  3. Add in the eggs and vanilla extract, stirring until everything is nice and smooth.
  4. Whisk together the baking soda and salt in a separate bowl, then fold this into the peanut butter mixture until just combined.
  5. Stir in the rolled oats until fully incorporated—your dough should now be thick, sticky, and oh-so-delicious!
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are lightly golden.
