Description

A vibrant salad loaded with healthy fats, proteins, and vitamins — perfect for a quick and nourishing meal.


Ingredients

Scale
  • 2 cups fresh spinach, washed and dried
  • 1 ripe avocado, halved and pitted
  • 2 hard-boiled eggs, peeled and sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Crumbled feta cheese (optional)

Instructions

  1. Rinse and dry the fresh spinach completely.
  2. In a large salad bowl, add the spinach as your base.
  3. Scoop the creamy avocado into a bowl, slicing it into thick pieces.
  4. Slice the hard-boiled eggs into even rounds.
  5. Toss in the halved cherry tomatoes and thinly sliced red onion.
  6. Drizzle olive oil and lemon juice, and season with salt and pepper.
  7. Gently combine all ingredients together.
  8. If desired, sprinkle crumbled feta cheese over the top.
  9. Serve immediately and enjoy!

Notes

Make ahead by preparing hard-boiled eggs and slicing veggies in advance. Store leftovers without dressing in an airtight container.
