- 1 ripe avocado, halved and pitted
- 2 hard-boiled eggs, peeled and sliced
- ½ cup cherry tomatoes, halved

- 1 tablespoon lemon juice
- Salt and pepper to taste
- Crumbled feta cheese (optional)
Instructions
- Rinse and dry the fresh spinach completely.
- In a large salad bowl, add the spinach as your base.
- Scoop the creamy avocado into a bowl, slicing it into thick pieces.
- Slice the hard-boiled eggs into even rounds.
- Toss in the halved cherry tomatoes and thinly sliced red onion.
- Drizzle olive oil and lemon juice, and season with salt and pepper.
- Gently combine all ingredients together.
- If desired, sprinkle crumbled feta cheese over the top.
