Description

A hearty, protein-packed burrito casserole perfect for family dinners or entertaining, featuring chicken, brown rice, and black beans.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) to create the perfect environment for a golden, melty top.
  2. Mix in a large bowl the shredded chicken, brown rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
  3. Transfer the mixture into a greased baking dish, spreading it evenly.
  4. Top generously with shredded cheese.
  5. Bake for 25-30 minutes or until everything is heated through and the cheese is bubbly and golden.
  6. Garnish with fresh cilantro before serving.

Notes
