Description

A warm and cozy dish featuring tender, flavorful beef, perfect for easy weeknight dinners or meal prep.


Ingredients

  • 34 pounds beef chuck roast
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1/4 cup lime juice (about 23 limes)
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup beef broth

Instructions

  1. Prepare the beef by trimming excess fat and patting it dry with a paper towel.
  2. Layer the quartered onions at the bottom of the crockpot.
  3. Season the beef with a mixture of garlic, lime juice, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne.
  4. Combine the seasoned beef on top of the onions and pour the beef broth around it.
  5. Cook on low for about 480 minutes, or on high for 240-300 minutes, until the beef is fork-tender.
  6. Shred the beef using two forks and return it to the crockpot to mix with the juices.
