- 3–4 pounds beef chuck roast
- 1 onion, quartered
- 4 cloves garlic, minced
- 1/4 cup lime juice (about 2–3 limes)
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup beef broth
Instructions
- Prepare the beef by trimming excess fat and patting it dry with a paper towel.
- Layer the quartered onions at the bottom of the crockpot.
- Season the beef with a mixture of garlic, lime juice, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne.
- Combine the seasoned beef on top of the onions and pour the beef broth around it.
- Cook on low for about 480 minutes, or on high for 240-300 minutes, until the beef is fork-tender.
- Shred the beef using two forks and return it to the crockpot to mix with the juices.
