Description

Delicious roasted sweet potato rounds drizzled with honey and topped with tangy feta, perfect for any gathering or cozy night in.


Ingredients

  • 2 large Sweet Potatoes
  • 2 tablespoons Olive Oil (extra virgin recommended)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika (omit if preferred)
  • 1 cup Feta Cheese (goat cheese can be substituted)
  • 2 tablespoons Honey (maple syrup can be used)
  • 2 tablespoons Parsley (freshly chopped)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the sweet potatoes clean, then slice them into half-inch rounds.
  3. In a large bowl, toss the sweet potato slices with olive oil, salt, black pepper, and smoked paprika (if using).
  4. Line a baking sheet with parchment paper and spread the seasoned sweet potato rounds in a single layer.
  5. Roast the sweet potatoes for about 25-30 minutes, flipping halfway through.
  6. Remove from the oven and sprinkle feta cheese over the top, drizzling with honey.
  7. Garnish with freshly chopped parsley and serve immediately.

Notes

These rounds can be made ahead and stored in the fridge for up to 3 days. Reheat in the oven for best results.
