- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil (extra virgin recommended)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Smoked Paprika (omit if preferred)
- 1 cup Feta Cheese (goat cheese can be substituted)
- 2 tablespoons Honey (maple syrup can be used)
- 2 tablespoons Parsley (freshly chopped)
Instructions
- Preheat your oven to 425°F (220°C).
- Scrub the sweet potatoes clean, then slice them into half-inch rounds.
- In a large bowl, toss the sweet potato slices with olive oil, salt, black pepper, and smoked paprika (if using).
- Line a baking sheet with parchment paper and spread the seasoned sweet potato rounds in a single layer.
- Roast the sweet potatoes for about 25-30 minutes, flipping halfway through.
- Remove from the oven and sprinkle feta cheese over the top, drizzling with honey.
- Garnish with freshly chopped parsley and serve immediately.
Notes
These rounds can be made ahead and stored in the fridge for up to 3 days. Reheat in the oven for best results.
